Kielbasa Stir Fry


1/2 onion, sliced
1 zucchini, chopped
2 green peppers, chopped
1 precooked kielbasa, sliced
olive oil


Coat the bottom of a large saute pan with olive oil, add in all ingredients and saute until veggies are softened. Serve over rice or pasta. Buon appetito!

Stephanie's No-Bake Cookies


2 cups sugar
1/3 cup baking cocoa
1/2 cup milk
1/4 cup butter
1/2 cup smooth peanut butter
1 teaspoon vanilla
3 cups oats

Combine the sugar, cocoa, milk and butter in a sauce pan and bring to a boil. Remove from heat and stir in peanut butter and vanilla, stir until smooth. Add mixture to oats in a large bowl, mix until combined. Wait five minutes for the mixture to cool down, then spoon in teaspoon size onto wax-paper and wait for it to cool completely before eating. Buon appetito!

Chicken and Corn Chili


3 tablespoons olive oil
1 large onion, diced
2 cloves garlic minced
4 chicken breasts, cubed
1 teaspoon salt, optional
2 tablespoons chili powder
1 teaspoon red pepper flakes
1 jar salsa
1 can great northern (cannellini) beans
1 can whole kernel corn, drained


Saute onions and garlic in olive oil. Add chicken and cook 10 to 15 minutes. Add all remaining ingredients. Simmer about 30 to 45 minutes or until chicken is tender, stirring occasionally. Serve with sour cream and cheese. Buon appetito!
