Oatmeal Banana Muffins
1 cup plain or vanilla Greek yogurt
2 to 3 ripe bananas
2 1/2 cups oats - old-fashioned or quick
1/2 cup honey or agave
2 teaspoons baking powder
1 teaspoon baking soda
2 tablespoons Chia seeds
*extras as you would like chocolate chips, walnuts, peaches etc.
Preheat the oven to 350°.
Combine all ingredients and in a blender or food processor.
You can use muffin liners but I prefer to spray the pan directly with Pam... since there is no oil or flour and these muffins they tend to stick to muffin tin liners.
Bake for 15 to 20 minutes or until the tops are set and golden brown.
