Chicken and Corn Chili


















Ingredients

3 tablespoons olive oil
1 large onion, diced
2 cloves garlic minced
4 chicken breasts, cubed
1 teaspoon salt, optional
2 tablespoons chili powder
1 teaspoon red pepper flakes
1 jar salsa
1 can great northern (cannellini) beans
1 can whole kernel corn, drained

Techinique

Saute onions and garlic in olive oil. Add chicken and cook 10 to 15 minutes. Add all remaining ingredients. Simmer about 30 to 45 minutes or until chicken is tender, stirring occasionally. Serve with sour cream and cheese. Buon appetito!
